The grapes for this blend were all hand-harvested with utmost care. It was destalked and then cold soaked for 48-72 hours depending on varietal and ripeness. During fermentation, a combination of punch-downs and pump-overs are done at 4-hour intervals for the extraction of colour, flavour and tannin. After the wines were pressed, they went into selected French 225ℓ French oak barrels for ageing for 18-24 months (depending on varietal) before blending and bottling.
A beautiful deep ruby red colour with a mixture of dark berries, cocoa and cigar box on the nose. The wine is almost deceptively soft at mouth entry but then explodes with wonderfully balanced fruit and acidity. A long lingering finish with a soft well-integrated tannin structure brings this wine to its crescendo.
